Sweet And Sour Boar - Daryl Haid

MEAT

Use 1 1/2 pounds of boar meat of your choice, cut
into 3/4 inch cubes.

DIPPING BATTER FOR MEAT

Mix batter using

   1 Egg

   1/4 Cup cornstarch

   1/4 Cup flour

   1/4 Cup chicken broth

   1/3 Cup oil in skillet, or proper amount in deep fryer


   Beat egg, cornstarch, flour, and broth until smooth. Dip cubed meat in batter and fry in oil at 365 degrees, or until golden brown. About 5 or 6 minutes.

   SAUCE

   1/4 Cup water                              2 Tblspns cornstarch

    1/2 Tspn salt                                1/4 Cup brown sugar

    1/4 to 1/3 cup cider vinegar      1 Cup Pineapple juice

    1 Tblspn soy sauce                       1/4 Cup onions, sliced thin

    3/4 Cup green pepper sliced in thin strips.

     1 NO. 2 Can pineapple chunks, drained

     Combine all but the onion, pepper, and pineapple and cook until thick. Pour over hot pork, add onion, pepper, and pineapple chunks on top. Let stand in warm oven 10 minutes.
